In most cases, cabbages are underrated for their taste and flavor, but I guess it’s not thinking outside of the stir-frying, boiling, fermenting, or steamed recipe. With roasted, you have more to enjoy including crispy- irresistible and caramelized bits as a combination with many main dishes.
Roasting your leftover green, purple or red cabbage is the new delicious, nutrient-filled and cheap vegetable dish you need to try. If you love roasted Brussels, you have an idea of how roasted cabbages are and how easy they are to make.
You are going to love the crispy roasted cabbage wedges. Cutting the cabbage into pieces and roasting them until they have that tender, caramelized inside and browned outside. The results are addicting and you can incorporate this dish anytime.

Roasted cabbage is a simple recipe that Is easy to make and affordable.
- 2 tablespoons extra virgin oil (You can also use bacon grease for extra taste)
- 1 medium green or red cabbage head (cut it into 8 wedges)
- 2 cloves of grated garlic
- Sea salt, or ordinary salt
- 1 tablespoon Black pepper powder
- 2 tablespoons Grated walnuts
- 1 pinch red pepper flakes
- Freshly grated parmesan cheese for topping
Preparation in the oven
- Preheat your oven up to 425 degrees Fahrenheit, a perfect temperature for great caramelized vegetable results. Line a large, rimmed baking sheet with a parchment paper to avoid sticking and for easy clean up.
- Slice the cabbage, (used green cabbage) into 8 wedges. Ensure you cut out the white core and place the cabbage on the cutting board with the face down for perfect cut wedges. This size is ideal to ensure you get the right results with well done cabbages. You may however find it hard keeping the entire piece intact when flipping, but that should not stop you!
- Mix olive oil, grated walnuts and grated garlic. Spread the olive oil mixture on both sides of the wedges, sprinkle salt, black pepper and red pepper flakes leaving the cabbage chunks intact and arrange the wedges on the baking sheet.
- Roast the cabbage in the preheated oven for 30 minutes, (Grilling is also recommended). Keep an eye on its results, toss it halfway and sprinkle the parmesan cheese and wait for 15 minutes for a perfect browned cheesy and caramelized cabbage.
Preparation on the Grill
- Cut the cabbage and prepare it just as for the oven baking.
- Ensure your grill is heated to medium-heat around 400-450 degrees F. For better results, consider brushing the grill with light oil or butter
- Place your cabbage wedges on the grill
- Cook for about 5-7 minutes each side until they are browned and crispy on the outside and tender on the inside.
- Top with parmesan cheese and wait for a few minutes for a delicious roasted cabbage.
Roasting cabbage tips
Once you remove the dark and loose leaves, cut the cabbage in half for easier wedge-making. Ensure each wedge is filled with your ingredients and arrange them on the baking sheet. The secret to perfectly done and crispy bits is to simply not overcrowd the wedges on the rimmed baking sheet at single baking.
Cabbage may vary in size. Ensure the quantity you use can easily fit in your pan. If it’s more, consider using two pans, one on the upper and lower parts of the oven. When halfway the baking time, toss the cabbage for even cooked sides.
